There is a popular misconception outside Southern Louisiana that Cajun food is hot and spicy.  Authentic Cajun  food will usually be a little bit spicy but not unusually hot.  The Cajun cook does not tend to overpower a dish with simple heat.  To a Cajun chef, it's all about the flavor.  Cajun dishes prepared outside of Louisiana are often hotter and more heavily seasoned than their Louisiana counterparts, missing the flavor of the original dishes. This is also a result of recent "extreme" food fads, whereas many foods are hotter than the originals.  "Not Your Average Cajun Seasoning" is our proprietary blend of more traditional spices and flavors that enhance the natural flavor of food, rather than a cover-up.
