Black Bean Heaven.
Most of us know that black beans are truly healthy. I normally add them to soups and especially chili. For this recipe, I just wanted to create a flavorful black bean side dish without being overly complicated
1 14 ½ ounce can of Black beans (or dry equivalent, cooked)
1 T Minced Garlic
1 Orange Pepper, coarsely chopped
¼ Red Onion, chopped
¼ Yellow onion, chopped
1 T Chef of the Future Brand Cajun Seasoning
2 T Fresh Cilantro (Cilantro Oil can be used if fresh is not available)
2 T Olive Oil (Extra Virgin)
Procedure:
Sauté the Garlic, Onions and Pepper in the olive oil until slightly translucent. Reduce the heat and add the Beans, Cajun Seasoning and Cilantro. Cook over a low heat until hot and some of the liquid reduces and thickens slightly.
Serve as a side dish or over rice.
