You will need:
2 cups all purpose flour
3 Tablespoons of “Chef of the Future” Cajun Seasoning.
2 Tablespoons vegetable oil
2 eggs
1 12 ounce beer, your favorite (the darker the beer, the deeper the flavor)
2-3 large yellow onions
Oil for deep frying
Salt to taste (if needed)
Procedure:
Mix the flour, seasoning, oil and eggs together in a large bowl. Add the beer
and whisk until smooth. Tap the base of the bowl to bring any air bubbles to
the surface.
Peel the onions and slice then into 3/8” rings, separated.
Dip the rings into the batter, covering completely and shake off the excess.
Fry in hot oil (375° -400° F) until golden brown, turning several times.
Remove and drain on paper towels.
These can be batch fried and reheated later in a 300° oven until hot.
These are great with the Floribbean Mayo, no Burger needed.
