Serving Suggestion with Stuffed Grilled Chicken
Avocados (1 makes 2 servings)
Lime Juice
Olive Oil (extra virgin)
Chef of the Future Brand Orange Ginger Pepper Seasoning
Salsa
Shredded Cheddar Cheese
Optional: Add some chopped fresh cilantro to the lime juice before brushing.
Procedure:
Halve the avocado longitudinally, Twist to separate use a chef’s knife to tap into the pit, twist and remove the pit.
With a paring knife, slice into the avocado flesh 3/8” slices, leave intact.
Brush on Lime Juice and sprinkle on seasoning. Brush on the Olive Oil, and open the slices slightly to allow the seasoning to penetrate.
Place on a hot grill for about 3 minutes, flat side down, to caramelize the avocado surface; do not move the avocado to get those great grill marks.
Pay close attention during grilling as the oil can cause flare-ups, be careful not to overcook.
Flip the avocado, skin side down and grill for another couple minutes.
Remove from the grill, add the Salsa in the pit hole, add some shredded cheddar and place under a broiler until the cheese melts. Serve immediately
