Rotini Pasta Salad
For Summertime or Anytime, this is a great side dish to enhance a main dish
12 ounces of Whole Wheat Rotini (cooked 10 minutes, drain and rinse with cold water)
½ each red, yellow and orange peppers, coarsely chopped
6 ounces Feta, crumbled
1/8 red onion, minced
2 T Olive Oil, Extra Virgin
1 T Balsamic vinegar
½ T White Vinegar
1 T Cajun Seasoning (Chef of the future Brand)
½ T SouthWestern Seasoning (Chef of the future Brand)
2 T finely chopped fresh cilantro leaves
1 14 oz. can Black olives, drained
Cook pasta, rinse with cold water and drain.
Add in Olive Oil, vinegar's, cilantro and seasonings. Mix well. Add chopped peppers, onion and black olives, mix then add crumbled Feta, mix well.
Let it chill for a few hours in the fridge for the flavors to meld. Serve cold.
